Immigrant chefs have also been involved in other projects, like catering university events.

    The Cocina Libre team is a passionate group of individuals dedicated to social justice and cultural preservation. Led by Dr. Julia Roncoroni and Dr. Delio Figueroa, the team includes immigrant collaborators, storytellers, culinary experts, and filmmakers, all united in their commitment to celebrating diversity and promoting inclusivity through the art of storytelling and food.

Our Cookbook

Food has the power to nurture, connect, and evoke memories. We celebrate participants who shared their life stories while cooking and eating with us. Each recipe comes with a story, in first-person voice, an intimate glimpse into the lives of those who have faced unimaginable challenges in their immigration to the U.S.

This cookbook, which is available in English and Spanish, is not just a celebration of diverse cuisines; it's a social justice initiative, reflecting our commitment to addressing the toll of immigration and detention. By bringing these stories to light, we aim to foster understanding, compassion, and solidarity.

Community Dinners

An exciting opportunity for us to come together in support of our immigrant community! In collaboration with Ruby’s Market and Chef Lesley Mortimer, we hosted two intimate community dinners at the University of Denver. Our next dinner will be with Ruby’s Market and Chef Edwin Sandoval, from Xatrucho.

These dinners are not just about enjoying delicious meals; they're a chance for us to connect, relax, and make a meaningful difference. All ticket proceeds will directly benefit the two Venezuelan immigrant chefs who will prepare the meal (who have participated in the cookbook we are writing!) and support Vive Wellness, a dedicated nonprofit working tirelessly to provide housing for Venezuelan newcomers.
